This superbly delicious sauce takes your traditional steak dinner to the next level. Rich and tangy, it perfectly complements roasted asparagus, shallots and grape tomatoes.

BROWN BUTTER ZIP SAUCE

8 ounces (2 sticks) unsalted butter

8 tablespoons balsamic vinaigrette

8 tablespoons extra-virgin olive oil

1 tablespoon plus 1 teaspoon chopped shallot

1 tablespoon plus 1 teaspoon creole mustard

Kosher salt and freshly ground black pepper

Melt the butter in a small heavy saucepan over medium-high heat. Let sit over heat until it starts to smell nutty and reaches a light brown color, about five minutes. If it burns, start over. Remove from heat and reserve.

In a blender, combine the vinegar, olive oil, shallot and mustard. Blend until smooth. With the motor running, slowly drizzle in the reserved butter and blend until thickened.

Season to taste and set aside at room temperature until ready to serve.
