This recipe is perfection. If I am lazy, I’ll pair it with a simple pan-fried chicken breast, and it's the perfect simple meal.

SAUTÉED ASPARAGUS WITH SHALLOTS

1 bunchof asparagus, trimmed and sliced into slanted 1 1/2-inch pieces

3 large shallots, thinly sliced 

2 to 2 1/2 tablespoons salted butter

Kosher salt and freshly-ground black pepper

 

Bring a heavy large skillet to medium-high heat. Add the shallots and butter. Sauté for about a minute. Add the asparagus and sauté for about 4 minutes, until brightly-colored and tender. Season with Kosher salt and pepper to taste. 

Yields 4 servings.
